Ripe elderberries are harvested, destemmed, and then fermented in stainless steel for 18 days at precisely 18 °C (64 °F). Distilled twice in a Christian Carl copper pot still and rested for 3 years in stainless steel, it requires 35 kg (over 77 lbs) of elderberries to produce a single liter of this piquant eau-de-vie. The nose introduces a curious medley of fruit and confection—sour cherry, orange, lemon, and cacao—which echoes through the palate with the addition of pink peppercorn, cream, and white pepper over warming chocolate undertones.
