This full-bodied, luscious, vibrant sake is somewhat of a powerhouse. A cavalcade of fruit (think, mango, strawberry, papaya, banana, honeydew), added with a certain creaminess, unfurls itself across the tongue as it delights with pleasure. This small Yamaguchi brewery, which had been closed for almost 20 years, has been revitalized by a staff of just five individuals who put up endless effort to produce a complicated, exquisite sake every year. The head of the brewery, who is well-known in Japan for his very sensitive palate and expertise as a sake sommelier, is honored by the name of the sake, “Harada.” Yamaguchi rice and water alone are used. The brewery, which was established in 1819, was destroyed during World War II. Although it was reconstructed, activities were put on hold for 20 years, from 1985 to 2005.Glad to say, they are back in full force!
