Combier Liqueur de Pastèque is a watermelon liqueur from Distillerie Combier in Saumur, the Loire Valley distillery founded in 1834 by confectioner Jean-Baptiste Combier, whose orange liqueur outsold his sweets and became the world’s first triple sec. The house still runs ten historic copper stills under a nineteenth-century hall built with engineering from Gustave Eiffel’s team, and has been led since 1994 by Franck Choisne, who later bought it from the Bollinger group. The recipe for Pastèque is short: fresh watermelon juice, a neutral spirit distilled from sugar beet, crystallised sugar from Normandy, and carmine, the natural red pigment, for colour. It is bottled at 20% ABV, and Combier describes it as intensely bright and rose-hued, which understates it; the bottle is hot pink. The importer positions it for summer cocktails with a fruity profile, and it does what a watermelon liqueur is meant to do in a watermelon margarita, a spritz with prosecco and soda, or shaken with vodka and lime, delivering ripe melon from actual juice rather than from a flavouring lab.
